Hi All! a couple of weeks ago i entered a Giveaway my friend Christina was holding over at her blog. Fortune smiled upon me and behold! I won a $40 gift card to cookware.com! Thanks again Christina! With my winnings I chose:
12 Cup Mini Bundt Pan
(i wanted the donut pan, but they were sold out!) and i choose these:
Rachel Rays Spoonulas! i have seen her use them tons of times on her show, and I i think to myself, “Who actually BUYS these things?” Apparently, I do! and i LOVE THEM. the best of both worlds. Half Spatula, Half Spoon!
So i set out to Make myself some Banana Bundts! i got a recipe for yummy banana bread and I was off!
I gathered up my ingredients:
2 Cups All-Purpose Flour
1 teaspoon Baking Soda
1/4 Teaspoon Salt
1/2 Cup Butter ( i used Country Crock vegetable Oil spread, worked great!)
3/4 Brown Sugar (i was out of Brown sugar so i used Regular white, tasted fine!)
3 Eggs, Beaten
2 1/3 cups Mashed Overripe Bananas ( i used 3)
I am pretty impatient, and only had new bananas. So i peeled some ripe bananas, threw them in a brown paper bag and let them sit on the counter for a bit. Not sure if it helped, but it sounded like a neat trick to me! they browned a bit!
I Preheated the Oven to 350 degrees.
First thing was to mix all the dry ingredients together:
Flour, Baking Soda and Salt.
Mix it up real nice and Set it aside:
Next, I got another bowl, in this one, i creamed together the butter and sugar:
I beat the eggs in another bowl: I feel like I used about 7 separate bowls for this whole recipe! :)
Then i mashed the Bananas up in a separate bowl as well. How does one mash bananas? they didnt want to mash.. probably because they weren’t ripened enough.. i had to get down ad dirty and use my hands! Then i added the Mashed bananas to the Beaten eggs and stirred well. Then added the Butter/Sugar mixture and mixed it up nicely.
Then i added that wet mixture to the dry ingredients. The recipe said “stir just to moisten”, i stirred it alot.. i didnt want to bite into bits of flour:
Then its into the Pan for the batter! And into the oven!
I knew right away that i over-filled the Pan, but i didnt have another (i could’ve used a muffin pan.. but i THOUGHT it would be alright). Boy was i wrong!
Those things fluffed up within Seconds!
After that, i decided to add the word Muffin to my title for this recipe. haha.
The recipe said for a loaf of banana bread, it take 1 hour to cook. these little bundt muffins were done within 20 minutes! Could’ve come out even sooner!
SO FLUFFY! :)
They were a tad dry but tasted SO GOOD. :) i probably use a real muffin pan next time. these were really yum. the chunkiness of the batter made it hard to see the decorative marking on the bundts, but they were fun to eat! Everyone loved them. i will make again. :)
